小麦粉などと同じように利用することが出来ます。
パンやケーキ、麺にカレーなど色々な食材が生まれています。他の穀物類と比べてもっちりした食感、パン等がアレルギーなどで食べられない方への代替食、そしてカロリーも低めと健康面でも期待の食材です。
